Corn Coating for Fish

Ingredients

1/2 cup milk

1 tablespoon lemon juice

4 3-ounce fillets cod or other fish

1 cup oil for frying

1/3 cup SAVAGE ACRES FARM YELLOW CORNMEAL

1/3 cup all-purpose flour

1 teaspoon paprika

1/2 teaspoon ground black pepper

1/2 teaspoon salt

1/2 teaspoon garlic powder

1/2 teaspoon dried thyme

1/8 teaspoon cayenne pepper

Directions

In medium bowl, combine milk and lemon juice. Add fillets and marinate five minutes. Heat oil in large, heavy skillet over medium heat.

In shallow bowl, mix together corn flour and flour. Season with paprika, black pepper, salt, garlic powder, thyme and cayenne pepper. Dredge fish in flour mixture.

Fry fillets in hot oil until golden.
